Don't have one?!?
Thursday, June 2, 2011
Curse this!

2 1/2 cup sugar
3 eggs
3 mashed bananas
1 cup buttermilk (1 c milk + 1/2 tsp vinegar)
1/2 cup oil (I use 1/2 cup applesauce instead)
1 1/2 tsp almond extract
1 1/2 tsp vanilla extract
3 cups flour
1 1/2 tsp salt
1 1/2 tsp soda
Directions:
Soften butter and mix well in Bosch. Add the remaining ingredients and mix well. If baking in 3 small loaf pans, bake at 350 degrees for approximately 45 -50 minutes. (This is always the hard part - the top seems done but inside still seems uncooked - I usually do the whole time but kind of start checking around 45). If making a large loaf pan, then it says to bake at 325 for 1 hour and 15 minutes - may need to cover with foil half way though.
Glaze:
4 TBS butter
1 tsp almond extract
1 tsp vanilla
1/2 cup orange juice
1 and 1/2 cup sugar
Mix well with wisk. Pour glaze over tops of bread while still hot in pans (poke holes in bread).

Cowgirl Cookies
1 1/3 cup all purpose flour, spooned into measuring cup & leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup m&ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 – 1/2 cup chopped pecans
Stir all the dry ingredients in a large mixing bowl.
Add
1 slightly beaten egg
1/2 cup butter (melted slightly in the microwave)
1 teaspoon vanilla
Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated.
Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350 degree oven. I got about 26-28 cookies out of these.

1 (.25 ounce) package active dry yeast 1 cup warm water (110 degrees F/45 degrees C) 2 cups bread flour | 2 tablespoons olive oil 1 teaspoon salt 2 teaspoons white sugar |
| 1. | In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. |
| 2. | In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture; stir well to combine. Beat well until a stiff dough has formed. Cover and rise until doubled in volume, about 30 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C). |
| 3. | Turn dough out onto a well floured surface. Form dough into a round and roll out into a pizza crust shape. Cover with your favorite sauce and toppings and bake in preheated oven until golden brown, about 20 minutes. Great time of year for al fresco dining! I had them all set up at the table and they chose the pool mats instead- ha. |
