A friend in our ward made these as their Christmas gift and we LOVED them and just had to have the recipe. They would make a great Valentine's day treat too- just drizzle the tops with pink or red candy melts. NOTE: They are not overly complicated but they do take a LOT of time! Rolling all the balls and then dipping all of them in chocolate took a while... But I'm not an expert chocolate dipper so maybe that's why it took longer! They were a hit at our super bowl party- everyone loved them.Peanut Butter Balls
1 C butter, softened
2 tsp vanilla extract
2 lbs confectioners sugar
3 C peanut butter (I used 3 1/2 cups since my dough wasn't moist enough with 3)
Combine and mix well. Measure dough with tablespoon measuring spoon to get all balls the same size. Roll into balls. Place on cookie sheets and freeze until firm.
Melt:
6 oz. semi-sweet chocolate chips
6 oz. milk chocolate chips
1 TBS shortening
Dip peanut butter balls in chocolate. Place on a cookie sheet covered with wax paper. (If you have a mini crockpot like pictured above, heat for 20-30 minutes, stirring occassionally until melted. I actually needed to double this for my batch!)
For white chocolate drizzle:
6 oz. white chocolate
1/2 TBS shortening
Place in bowl and melt in microwave, 30 seconds at a time. Dip spoon or fork into melted chocolate and drizzle across balls. Place in freezer to harden.
Makes about 250 balls the recipe said, but mine must have been too big because I only had 100!
