We LOVE Salmon!

It's so funny how different people love different fish. Some love halibut. Some love Sea Bass. Some love any kind of fish. Others, like us, LOVE Salmon. Our kids even LOVE salmon. They get SO excited every time we have it for dinner. When we lived in Texas, Central Market had Pecan Crust sold in little tupperwares for fish. It is AMAZING on Salmon. Maybe that's how we fell even more in love with the fish. ;-) Everytime Ger goes to TX on business I have him pick up some more. But another way we love to cook it up is on a Cedar Plank. We pick them up at Costco for around $1 a plank... Here's the recipe- if you like Salmon you will love this! (If you'd prefer Chicken, you can actually substitute that for the salmon and it's really yummy too.) The recipe is SUPER easy. SUPER fast. A great meal if you don't have much time. Note: Salmon is SOOO good for you. It is low in calories and saturated fat, yet high in protein, and a unique type of health-promoting fat, the omega-3 essential fatty acids that do a lot for our body and brain. It's a super food!
Coastal Cuisine Cedar Planked Salmon
1 filet of fresh salmon
3 TBS Coastal Cuisine Dry Rub
1. Soak cedar plank for a few hours in water.
2. Set salmon, skin side down on soaked plank (I get my salmon at Costco and they remove the skin)
3.Place plank on preheated grill with medium-low heat. Grill for 10-20 minutes with lid closed until salmon flakes easily. Don't over cook- the salmon will dry out!
Note: Check salmon every once in a while- if your plank starts on fire have a spray bottle handy to spray out the flames! Serve Salmon up with butter and lemon wedges.
Coastal Cuisine Dry Rub
A tasty all around dry rub for seafood, chicken, and vegetables!
2 TBS salt
2 TBS brown sugar
1 TBS black pepper
1 TBS garlic powder
1 TBS dried basil
1 TBS paprika
1 TBS dried Tarragon (optional)

I'm a total salmon fan too (too bad Dustin doesn't do fish!) Ever thought of becoming a food artist, Kim?
