This is a a summer favorite because it's super versatile and so tasty and healthy. Chop up the veggies and make it your own. I don't even have a pic of the final product but the recipe and tips are below!
We usually add diced chicken from Costco or grilled. If you do kabobs or grilled chicken one night, do extra for the next night to use with this salad.
COOL RANCH SALAD
1 each green, yellow, and red peppers, diced
1 can black beans, rinsed and drained
½ - 1 red onion, diced
1 can Jolly Green Giant white shoepeg corn (or fresh corn is fabulous!)
1 cucumber, diced
2-3 limes
1-2 T rice vinegar
3-4 chicken breasts
½ c honey
½ c soy sauce
1 tsp garlic powder
½ head lettuce
tomatoes (optional)
1 avocado (optional)
cheese (optional)
One bag cool ranch Doritos (we use tortilla chips)
Mix peppers, onion, cucumber, black beans, and corn. Squeeze limes over the top. Add the rice vinegar and chill. Marinate chicken breasts in a refrigerator bag with honey, soy sauce, and garlic. Marinate in fridge for at least 2 hours or longer. Cook just before serving (you can use a rotisserie chicken if desired). Chop up lettuce. Layer on serving plate: lettuce, chilled veggie mixture, chips. Cut up tomatoes and avocado if desired and add to salad. Top with cheese. Serve with ranch dressing.
Note: We actually just have the pepper/corn salad with chicken then add a little ranch and crushed chips. (Topped with homemade salsa is fabulous! Also we love using the Cafe Rio Ranch instead of regular ranch. Recipe's on my blog...) Sometimes we do the lettuce part and sometimes we don't but either way it’s great. So yummy. Great for guests! Real crowd pleaser. Makes a lot, so cut in half if you don't want a ton.
