New Years Party Treats :)

A friend brought these over for Christmas- they were gone probably before she got home! YUM! They are so scrumptious. They are not heavy like peanut butter balls... just light and creamy and so delish. They really aren't hard to make, despite the long recipe below! Just a little time consuming to roll and dip... My friend had barely dipped the bottom in chocolate and then drizzled the top with chocolate which was so much pretty I thought than the ones above! Can't wait to make these... what treats are you making?!?

BUCKEYES!

Yield: 36 to 42 tablespoon-sized candies; I made 64 with a #70 (1/2-ounce) scoop and got 64

The classic recipes for buckeyes I’ve found on the web use up to twice the amount of powdered sugar (yes, 6 cups) and two full sticks of butter for the same amount of peanut butter. This variation is less aggressively sweet, with a little tang from cream cheese and warm flavors from the graham crumbs. The only thing I wished it had was salt — perhaps a quarter teaspoon? Maybe a half teaspoon of something light and flaky? I think that salt really brings out the flavor in a peanut butter candy (try just the peanut butter portion of a Reese’s peanut butter cup alone if you don’t believe me), especially against a chocolate coating.

1/4 cup (2 ounces) cream cheese, softened
1 1/2 cups peanut butter (smooth, but you can use chunky if you are looking for more texture)
1 cup graham cracker crumbs (from about 14 graham crackers)
Salt (optional, see note up top)
3 cups confectioners’ (powdered) sugar
10 tablespoons (1 1/4 sticks or 5 ounces) unsalted butter, melted and cooled
12 ounces dark chocolate (60 to 72%), coarsely chopped

Make the filling: In the bowl of an electric mixer, beat the cream cheese and peanut butter together until combined. Add the graham cracker crumbs and beat for 10 seconds. Add the sugar and butter, and mix on the lowest speed until it stops floating off everywhere, then increase the speed until the ingredients are combined. Scrape down the whole bowl well, then mix again. The mixture will be quite sturdy and a little dry — perfect for shaping. Set it aside while you prepare the coating.

Make the coating: Melt the chocolate either over a double boiler, stirring until it is completely smooth or in a microwave in 30 then 10 second increments, stirring before you start it again until it is completely smooth. Let it cool to tepid (about 100 degrees, though I’d go a little cooler next time for a thicker coating; I had a few ounces of chocolate leftover) while you shape the peanut butter centers. [Alternately, you can temper the chocolate (fairly simply instructions here) for a perfect showy finish.]

Assemble the candies: Line a sheet pan with parchment paper. Scoop out slightly more than one tablespoon’s worth of filling (their suggestion; I used a scoop that made them a little smaller) and use your hands to form it into a ball. Place the ball on the prepared sheet and repeat the process until all of the candies have been shaped. They can sit close to each other but make sure they are not touching.

Using a fork or large skewer, dip each ball into the chocolate and roll it about so that almost the entire candy is coating, leaving a small circle uncoated. Play around with a few practice pieces; I found it easiest to stick the skewer in the side, angle the bowl I was using towards it and make sure it became submerged as I rolled the candy around. But don’t fuss too much; even the “ugly” ones won’t go to waste.

Chill the buckeyes until they are set, about 30 minutes.

Do ahead: Buckeyes will keep in the fridge for what the book says is 3 days, but I’d say at least a week, should you keep them in a lockbox and hide the key.

I came across these todays! YUM! Can't wait to try them.
Vanilla dipped PEPPERMINT OREO® Cookies!

Peppermint Oreos are IN right now... in season that is. Get them before they are gone! Also pick up... Sucker sticks, candy melts, sprinkles, and wax paper.

SLOWLY push the sucker stick through the middle of the oreo- stopping about 3/4 the way through the cookie. Melt candy melts at 30 second intervals in your microwave. Dip both sides of cookie.... You can use a spoon to cover top of oreo if you want... Gently shake off excess... and place on wax paper to set.

After they are dry, melt chocolate melts in a sandwich bag... snip very tip... add swirl to cookie... and sprinkle with sprinkles! Make sure to do this over a plate, so the excess sprinkles can easily be put back in the bottle. You could also dip the wet swirl in a plate of sprinkles if that's easier for you...
My kids would love making these! Lots of colors of sprinkles for different cookies would be adorable for any party.
Also love making these sugar cookies at Christmas time!

Letters to Santa...

Our kids keep changing what they want for xmas... Finally (after trying to tell them why they really don't needs phones or iTouches at their age... and how we wrote a letter to Santa telling him to not bring any to our house) we said, ok well you better decide what's really important to you and write your list to Santa. So they did! Sydney actually found these cute ones off craftingchicks.com so I thought I'd share... This first one is for little ones who can't write- they can draw a fun picture of what they want!
Then this is for older kiddos. Head to their website for the best quality probably... http://thecraftingchicks.com/2011/12/letter-to-santa-free-printable-download.html
Then we "mailed" them to the North Pole. Growing up we burned them and could swear we saw the letters on the page going up in the smoke. ha! Another fun Christmas tradition!

Neighbor Gifts & Xmas Treats!

So many fun things to think about this season... including Neighbor Gifts! These are our criteria for giving:
  • Has to be something we LOVE (sounds silly but seriously, it has to be GOOD!)
  • Has to be something that we can all work together to get ready for giving (I think it's so important that the kids get involved! I LOVED doing neighbor gifts growing up with my fam- its such a fun tradition and a small act of service for those we love and appreciate!)
  • Something useful that others will use and appreciate
I love the Bath and Body Works Holiday line... a few years ago we did "Spread Love Not Germs" this Holiday Season. The kids loved helping put kisses and hugs in a cellophane bag with a bottle of soap. So something we love, totally fun to put together as a family, and super practical for anyone!

2 years ago we did something a little different... Kringle Family Cookies! Gerron wrote the most amazing poem/story to go with it. I would share it but it has major publishing potential... Auna will you be the illustrator?!? ha. Wanted to share with others one of our favorite cookie recipes that they could enjoy as a family over the holiday season. YUM!

We love popcorn and soda pop for a treat... You can do the microwave popcorn... but if you've ever tried Popcornopolis you will be hooked. It is amazing. We got some as a Christmas gift one year! People loved getting this fun and yummy gift... and it didn't have to be eaten immediately. Sometimes that's the major drawback with homemade goodies.

I think the tag/wrap makes the gift! Make it fun and bright! This is a great gift for teachers/aides/school office staff/neighbors/friends/whoever...

Ok this gift got squashed before I took a pic (wasn't giving it away- had to present some ideas at a RS Evening and took it to show!)... but anyways, we LOVE granola and this kind from Fresh and Easy is our favorite. Pair it with a cute santa bowl and it makes for a fun gift for a friend!

Journal Jars... You've all seen them... but you can find some great questions online and they make a great gift for your child, your sister, your friend, anyone! I have loved reading my kids answers- totally priceless to read their scrawled handwriting with funny answers...
Bright colored paper makes them even funner. Journals for any age are a great gift...
We totally LOVED Aunt Jemima Wheat Pancake mix. Then no one carried it anymore for some reason, so we had to special order it by the case. Something like that makes for a great gift- something you absolutely love and want to share with others!
You could even tie a spatula from the Dollar Store to go with this gift.

Ok and on to Treats! Here are some fun and easy ideas... that the kids love to help with! Oreos dipped in chocolate... you can drizzle them with Wilton colored melts, sprinkle with sprinkles...

Or make them especially festive with crushed peppermint.
Making gingerbread cookies is a MUST! Colby's favorite book right now is Gingerbread Baby- such a cute book. Read it and then make the cookies as a family. Love craft/baking project that has a book to go with it!
One of the funnest neighbor gifts we got was a Gingerbread Man Kit. Everything was carefully packaged in a takeout box with sections.... homemade gingerbread cookies, royal icing in a ziploc (just cut off a tiny corner to frost cookies), and all the fun yummy treats! The kids LOVED this and it was so fun to do as a family.
Sugar Cookies are also a must around the holidays! That would be a fun gift too- a kit with everything to frost and decorate them with...
LOVE peanut butter balls.
Such a fun and festive holiday treat...
The hearts are a little trickier to make, compared to just rolling balls, but so pretty... The kids actually love helping roll the balls though!

If you need a holiday treat in a hurry... buy white chocolate/yogurt pretzels and drizzle with chocolate or dip top in white chocolate and then in sprinkles... Always a hit and look like a lot more work than they really are!

And! Last but not least, Caramel Chocolate Pretzel Sticks! YUM! This is a favorite at our house... The kids love unwrapping the caramels and helping mix... dip... and sprinkle! So pretty wrapped in cellophane and makes a great gift to anyone.

My kids absolutely love making treats- such a fun holiday tradition to spend time in the kitchen making and baking. Can't wait to give out our neighbor gift this year that has to do with just that!!! Last year with baby Allie and heading to UT for Christmas I didn't get to crafty/creative... So I can't wait to see what we make together next! What's your favorite thing to gift/make for the Holidays?!?

Daddy's Little Girl...

Yup, through and through Allie is a Daddy's girl! And Daddy absolutely cherishes every moment with his Allie. Allie has him wrapped right around her little finger. Yes... she loves her mom but def prefers her dad. :-) Much to my dismay at times! But I LOVE this pic from over the weekend in Sedona... So happy together! More pics coming soon- an incredibly fun trip with the Stums. We are grateful for each of you. Hope you all had a wonderful Thanksgiving Holiday!

Holidays are Here!

I laugh everytime I go into Target or Hobby Lobby in October and they already have Christmas stuff! This year though I think we will just skip the fall decorating and skip right to Christmas! I'm so excited to decorate in Holiday brights this year... bright blue, pinks, reds, lime green... Gold... maybe even some purple! Totally inspired last year by our stay at Grand America! Speaking of brights... I'm loving Tiny Prints Holiday cards that are bright and fun rainbow colors! Despite dressing in fall colors for our pics, I think I am going to have to go with a bright card. We used Tiny Prints last year as you may remember... and even though I went a little crazy with too many pics- ha- we loved how they turned out... the quality is amazing. You can always find a discount code online somewhere for them... Check out all their holiday line up... including these fun brights... at http://www.tinyprints.com/shop/picture-christmas-cards.htm
Pics taken... check! Neighbor gifts... check! Lists made for kiddos... check! How is your holiday season shaping up?

We 'heart' Rain!!!.

Colby has said to me more than once... "I want to move to Utah because it rains there." ha. We just haven't had a whole lot of rain lately! So last week when it started raining while the kiddos are playing, they were all ecastatic! You would have thought they had never seen rain before- sheer joy and excitement... giggling, sticking out their tongues to catch the rain, splashing in tiny puddles, and on and on. They would not come inside...
They played Dodge ball on the tramp...
Rollerbladed and biked...
Sang and danced....
And spun circles in it! Allie thought it was the coolest thing ever.
Rain rain come again... today!

HaLlOwEeN 2011

Whew. Halloween is over. Hallelujah! Ha. Don't get me wrong, we love Halloween... it was just an especially busy one! 3 parties... drama and hours spent shopping for just the right costume (in years past my kiddos haven't been too picky!)... sewing and blinging out accessories... etc! But! Hurray- it was all so much fun and the kids loved every second. Super pleased with their costumes and had a blast. Family has been asking for pics so here are a few... ok too many but anyhow?!?
Fall Festival at the kiddos school- lots of fun! A carnival and auction to raise money for the school. We won the Lego Basket- Colby was ecstatic!
Fun with friends! Kylie and Abagail with Sydney! People kept doing a double take before realizing it was Sydney- that brunette hair! She looked so great though as Leia.
Well Allie has pizza on her face but we had a fab time at the Bennett twins 2 year old party- themed Mickey Mouse Clubhouse! Lissy and Mom would be so proud- I sewed the apron for her tutu and it turned out so cute! I made her bow for her ears too... I might just take up sewing one of these days?!? ;-)
The ward party! Lovin the Star Wars Theme... Anakin Skywalker, Princess Leia, Padame, and Luke Skywalker.... then of course a princess and Minnie Mouse too!
Every year the party is held at the Judy's field- always lots of fun. It was a beautiful night and Allie loved chillin with Ger most the party... and not smiling for the camera. Oh well.
Susie's Padame costume is incredible- you can't even see the boots or belt very well but it is so fun to wear. Had a great time chasing around the kiddos!
Hooked up with JJ there... The highlight for the kids was probably the trunk or treat!
Phew. Onto last night! Trick or treating! We had a fabulous outdoor dinner at the LeSueurs... which I somehow managed to not take any pics at... and then headed out with George and Susie and some friends in our neighborhood! Allie switched it up to be a Halloween Fairy of sorts?!?
The girlies just love Brescia- she made a fantastic Rodeo Clown.
JJ and Colby and the rest of the kiddos literally RAN house to house. Laughing, giggling, and yelling, MERRY CHRISTMAS! Ha. Totally silly of them. Finally at one house the man said, Well I must be Santa then! Ho ho ho! The kids all got a laugh out of that.
Allie was so funny. We went to a few houses with her and then thought she would be fine to not go to any more houses... She would not have any of that. She literally jumped out of our arms to run up to the door with the kids! "More" is what she would say, since she couldn't say Trick or Treat! And yes, she insisted on carrying her own bag and walking some of the time! Oh dear... we had a lot of patience for her because she was so stinkin cute and happy! She did manage to open every sucker she got- 8 to be exact- and take one lick and stick it back in her bag. Yum!
Yes! We made it to the end of the night happy! All the kids were super great the whole time- no whining, complaining, arguing... it was so great. Getting them to stop eating their candy and go to bed was a whole different story!!! ha. But we hope each of you had a wonderful Halloween too!
